My Quest for Excellent Low Carb Recipes

Hi!

My name is Karen Estes.  I am a Mom, Nana, Nurse, Internet/Local Marketer and a picky eater.

Many years ago, I realized I was heading for Diabetes: I had a family history of brittle/ severe Adult Onset Diabetes.  My sister had Hyperglycemia. I was carrying too much weight, especially around my middle.  My glucose levels were climibing over 110.  Different types of dieting had little effect.

I abruptly decided a Low Carb Diet was what I needed to follow.  I  immediately switched to a Low Carb/ sugar free way of eating.  Let me tell you - it was expensive to abruptly start this WOE (way of eating) back then.

Now adays - online sites like Netrition.com, Vitacost.com & Amazon have made Low Carb ingredients more accessable and affordable.  I have found excellent fine Almond Flour, Heavy Whipping Cream, Cream Cheese, Shredded cheese at Sams Club & Costco for very reasonable prices.  Drug Emporium carries many low carb ingredients as well as a huge supply of supplements.

I was frustrated with many low carb recipes I found online.  The author would say how good they were - but after I had spent time & money making the item, I was often dissapointed by the texture of the food.  I wanted a cookie to taste/seem like a cookie.  I didn't want it to be wimpy.  So I decided to try to improve upon recipes & ideas I came across.

Currently, I've stablized my glucose levels around 98. (yay!)  I've lost some weight (I am too sedentary, I know)  Most of all, I feel much better than I did before I went Low Carb.  I eat approximately every 3-4 hours, smaller portions than before I changed my WOE.  

So, just to warn you - this is NOT a 5 ingredient or less site.

Yes, I use many weird ingredients you may never have heard of.  I will try to have a basic form of the recipe with less unusual ingredients, and then  mark the optional ingredients which (to me) makes for the best end result. 

I will also tell you where I find the ingredients.  Some may be affiliate links, others won't be.

Do what I did.  Get a few new ingredients every so often.

I have a relatively bland palate - I don't like spicy things.  So, you may want to add more seasonings  if you do like spicy flavors.
